Vitamin K activates proteins in the organs: the blood coagulation factor in the liver, osteocalcin in the bones and MGP (inhibitor of calcium deposition) in the cartilages and arteries. These proteins help blood to clot, calcium to bind to the bones and arteries to be cleaned of calcium deposits. A vitamin K deficiency is therefore associated with an increased risk of atherosclerosis and osteoporosis.
